If someone does say ABC is their top choice, will XYZ know and not extend an offer?

I would not tell 4 different banks that they're your top choice, there are better ways to express interest (ie reach out to a bunch of their associates)

Yes, some will talk with each other and compare. Have to be a good banker and let them know they're in the running without explicitly saying they're #1 (unless they are).
