Recently been undergoing a HireRight check and have been unable to provide all info on work experiences E.g. I have no contract on file from a shadowing week back in 2015. Will this be an issue to the bank I’m about to join given how old and short the week shadowing experience is?

A 1 week shadow 5 years ago... highly doubt they'll even check
If they do, can you provide any emails about scheduling or anything that shows you did it? Contact info for the person you shadowed?
As long as you can verify it wasn't made up you're fine. No one expects HR to know about your 1 week shadowing, any basic info is okay
