Sailing is cool, I would go with that. Don't put "yacht" on your resume, I beg you
Horseback riding takes years and years to learn. It's interesting but not something you will get reasonably good at in a semester or two
goes without saying if any of these is particularly interesting to you, go with that. I might call "stargazing" astronomy on a resume though :-)
