Need Advice - Regarding internship opportunities - LSE course

Hello,
I am a freshman undergrad from the Minneapolis area having a really hard time getting an internship. I have had a couple of interviews, but no offers yet. So I am applying to a couple of different summer programs that would help boost my resume and that would be a great experience for me. I applied to take a course at LSE (London School of Economics) this summer, and I also applied for the Vanderbilt Accelerator program. I am wondering if any of you guys have an other ideas for me to pursue (such as other programs), or if any of you have any reviews or knowledge about LSE summer program or the Vanderbilt/ Owen Accelerator program.
Thanks
