Would a Politics and International relations degree be of any use/help me get into IB?
If I get good internships etc would that help? Is there lots of mathematical modelling in it? Would consultancy be a better choice?

Modeling isn't that mathematical, nothing you can't pick up.
FWIW getting the internships is the hard part. Internships turn into job offers and are the main pipeline for banks to hire people for full time positions. No degree is going to be of any inherent benefit in the recruiting process. The degree literally just proves you have some academic potential, its not something banks assume will teach you any meaningful skills for the job.
