Because if you want to get into IBD I don't think messing around with Mortgages at the Pru will help you.

Citi has a strong brand name, plus some BBs see Risk being on par with FO/is FO (JPM for instance).

It will give you a better story to spin along the lines of "It was great because I got a lot of exposure to different financial products a universal bank can offer its clients but I want more exposure to different companies and industries. The knowledge I have will help me think 'out side of the box' when working on client transactions in a coverage team and think in the macro about all the additional inputs to getting a capital raise or M&A transactions done..." - something like that.

Also, when it comes to FT recruiting HR are going to take your Citi ICG Structured Products (probably can leave the Risk bit off for the phone call) offer more seriously than the P{ru when you're trying to get them to expedite your recruitment process.

I probably wouldn't ask Citi to switch to IBD after the internship though unless you want to risk burning your offer and any leverage you have going elsewhere.
