Skipped on cycle for 2027 associate class and am delaying off-cycle for probably another month or two. Did I nix myself from going to a top UMM/MF? Fine with doing a 3rd year in IB to get what I want.

No. There are always firms that leave spots for off-cycle. Sure, APO might have filled their class, but most MF's end up taking some off-cycle spots a year. Ended up getting my offer on-cycle. but out of my friend group from a super target who ended up at top UMM's and MF's, ~half got their offer in off-cycle. I recruited in 2022 (associate class of 2024), but doubt it changes drastically in terms of recruiting approach.
No, I ended up at a MF on off-cycle (though to be fair this was during early COVID where people need bodies).
If you don't mind doing a 3rd year for IB you will still get the same opportunities when you're a 2nd year analyst / may even have an edge.
