I used to do it - I charged $200 / hour and it mostly consisted of argus & excel work with some actual thoughts & ideas type stuff. There was a lot of demand a few years ago. I will say though, I'll never work for $200 / hour again. I think I'd need $500+ and would only accept certain assignments. The work that can't be done in-house is usually super tedious, meticulous, and not fun. It's the work that nobody really knows how to do and a lot of it is ad hoc.
