Just wondering if attending several events on M&A (from FT.com, various companies etc.) should be included on the CV.

No. Demonstrate your interest in the industry through your work/extracurricular experiences. Anybody can attend a lot of those events so it doesn't mean anything

Do more relevant internships as those will be the main aspect of your resume that show interest in the industry. The other events attended do not mean much.
