Post-Brexit Work Eligibility for EU citizens?

I'm finishing my undergrad here in the UK and will do a summer internship in London this summer. I'm enrolled in a Masters in Finance program that's not in the UK starting this fall and will take 2 years to complete. My concern is that if I leave to do the Masters I might lose my UK work eligibility and would have to apply for a visa in future.

I'm a EU citizen with no property or family in the UK and I ultimately want to work in London. I've thought about applying for permanent residency but I've read that this is futile as it will not be recognized post-Brexit. Any thoughts?
