Time Killer

So I'm going to be ending a one year teaching fellowship (think TFA but with much less prestige) in the summer. I've been contacting some alumni of my school hoping to get interviews/contacts for management/strategy consulting. As I'm aware, the alumni are telling me that the interviews would take place in Summer/Fall 2012 for positions starting in Summer/Fall 2013. My question is in the interview if they ask what are you going to do between now and the start date, what would be a good thing to tell them? Should I do some community service? Is there anything that looks good where I would be able to say there's a definite ending date? I know everybody talks of getting internships (paid and unpaid) but would that have a definite ending date? Should I just tack on another year of teaching?
