Broadly speaking, what kind of roles do they go in to?

Good question, I'd like to know as well.
I have no exposure to European tech firms, but in the US common routes in tech for ex-bankers or those with an MBA (btw these two can vary significantly, but I'm just lumping together because your question asked that way) are finance, corp dev, strategy, bus dev, and product management. Those are probably the most common, may be missing something
I am in F500 Finance, so im not a banker, but I have interviewed for the following jobs at startups / tech firms: Corporate Development, FP&A, Strategy & Operations, and positions that are a mix of them - something like FP&A / Corporate Strategy. You could also probably get a product management job out of IB, especially in the same industry. I.E. you work in Consumer / Retail IB and apply to be a product manager at Bonobos
So basically, you would have the same opportunities at a startup as you would if you jumped to a normal company. Finance groups, Corp Dev. / Corp Strat, and Ops roles are the most common.
Exactly as jss09 said. Another route is also in marketing in some companies, because it combines project management responsibilities with P&L ownership (imagine a brand management role in FMCG, but without washing powders or tampons).
