Applying for jobs while abroad?

I just graduated this May and haven’t had luck with jobs for the past 2 months and due to some now resolved legal issues I wasn’t able to leave the country. (Case thrownout in my favor) I have the opportunity to go abroad for vacation and get a temp/internship role as an analyst at a privately owned company. My ultimate goal is to be able to land a job when I get back so I’m not sure if I should put something along the lines of “currently working on a project abroad” at the top of my resume or in my cover letter would be a good idea. I don’t know enough about the hiring process so I’m not sure if I were to go abroad and cannot be reached via phone ( but can be reached via email) would that land my application in the trash?
