Cover letter networking question

Hi, i'm in the process of readying my resumé and cover letters for the intern application process (UK). I understand that opening indicating your knowledge of the company and why their company particularly interests you is important.

Referencing an employee you've talked to and learnt from seems to be a very good way of making yourself a little less like every other cover letter.

A few of the companies are coming to my university in Mid-October, this is an opportunity for me to ask them questions similar to those at coffee chats - which also helps me get a named reference in my cover letter.

However, Some companies such as Deloitte recruit on a rolling basis and have started interviewing already and thus recommended to apply as soon as possible. Should I contact them asking to arrange a telephone chat with somebody of relevance?
