Making the most of available space on a consulting CV

Question for the experienced consultants on this form:

As you spend more time as a consultant and get more projects under your belt, wondering what the optimal trade-off is for quality vs quantity in describing these on a resume... i.e. given limited real estate on a one-page CV, is it better to list a few representative projects and provide detailed bullets about what you did on each, or list most or all of your projects with only a high-level description of each (more like on bullet)

Not recruiting or anything but nonetheless curious what the best practice is
