MBA to Specific Consulting Practice

I am going for an MBA starting next year. Can someone tell me at (1) the internship level and (2) the recruitment level if new MBAs can apply to a specific practice at a large consulting firm? For instance, if I am interested in payments consulting do I apply for that role or is it a general strategy position and then I can later specialize?
