OP, when on a plane i usually read articles from my favorite periodical, the Economist. i find these articles to be very stimulating... to my cock. just the other day i was reading an especially heated piece on monetary policy and was able to rub one off six times on a three hour flight. true story.

Anyway, for me depends on the length of the flight. I've had to take brutal 17 hour flights to Sydney to visit family, so I generally sleep. I try not to eat on the plane. So sleep or perhaps read.
If I'm not hungover -- talk to the person next to me.
If I'm hungover -- pass the fuck out.

Being serious, I just read WSJ. I get home delivery Friday, Saturday and Monday and read them in the Monday morning flight. I pick it up from front desk (at SPG) or have it delivered at room (at Marriott) Tuesday, Wednesday and Thursday, and read it on the way back Thursday evening. Most of my flights are 1.5 - 2 hours.
Work, unless I'm feeling really daring, then I sleep.
