I think you should be upfront and honest about choosing University A, and emphasize how you weren't willing to settle and was successful in transferring to University B. This keeps the pressure off you, since you're being completely open and honest, and also shows HHs that you know how to hustle, and you're willing to grind to get to a better spot
your previous university should 100% be listed on your resume (it doesn't have to have it's own section, but under B, you should note transferred from A as a bullet point). If you were to present your story as in your post and then get an offer and we found out that you hadn't been truthful (because it would 100% come out in the background check), I can guarantee you that we would rescind the offer.
There's no shame in having studied at a lowly ranked college, especially if you transferred so not sure what the bid deal is all about
Thanks for the advice. What do you think about not listing it on my resume but bringing it up verbally when asked about the above? Personally I would feel more comfortable doing this.
Also - after using the search a bit on the site, it seems that a lot of people say to only mention the school you graduated from and its fine to not talk about the school you transferred from. Especially so for those coming from a community college to a better school. - Just curious why you guys think it should be treated differently in this case?
Also what should I do given that my HH meetings have followed the story above, not including University A?

Put down both universities. Nobody will care as long as you have a decent reason for going from A to B. I don't have the same experience but I lateraled from a small MM IB group to a larger platform after 9 months and was asked by the CEO of our HF why I moved. "I felt that I needed to go to a larger bank with better deal experience so that I can be sitting here having this conversation with you today". He nodded his head and officially gave me the offer at the end of the interview.
When people feel they have made an education or career related mistake / are underachieving / whatever, they think people will penalize them. The reality is that when a person works his butt off to better himself, you sometimes get even more street cred because you show the most important characteristic - hunger. Couldnt agree more here. Thanks. I think I am going to put it on my resume and shuffle around my story. What do you think about just having one bullet noting that I transferred, rather than a full section so I can save space?
