Dealing with Grade Inflation
So I go to a target that is known for grade inflation, but at the same time, I am studying a hard STEM major. Does the 3.5 GPA rule still apply to me, or should I aim for a higher grade?

Why would you not aim for a higher grade? Having a higher GPA is only going to help you. If 3.5 is the best you can do, I wouldn't worry too much.
I do want a higher grade, but I just have a tough major so I’m wondering
There is no "rule". You will be better off with a higher GPA. There's also several threads on this on WSO
