1. You did a spring week - assuming this did not convert into a summer?
2. Great few offers to choose from. You won't be at a disadvantage from "pivoting" away from pure-play IB.
Re the corp dev role. Deep Tech is a fast-growing field in Europe and there might be scope to grab a small slice of equity (LTIP plans AFAIK tend to involve at least 3 months - but this definitely varies from startup-startup). Their own in-house corp-dev/M&A teams will most be likely be very aligned with PE board-level decision-makers.
People on this forum focus too much about what they find "interesting". Give yourself as much optionality as possible, try different sectors out, observe how different teams operate.
There's a vast amount of material on this forum re giving yourself the best chance of securing SA in London.
