Due Dilligence on SA's or other past experience

How much due diligence is done on the things that SA's put on their resume? Do you call the firms they worked for and ask "So candidate XX put the following on their resume. How badly did they spin reality?"

What if the candidates past experience is completely outside of finance (internship at the NIH, a government agency, or something total unconventional)?

We all take it as a given that 99% of the work interns do is grunt work, so when 100% of the things on their resume look like 'real' (i.e., NOT grunt) work, do you just nail them all?
