If a guy says " I will get back to you with an update or when I have heard more news", when should you chase up again?

I would start with two weeks, If still no update after that, try giving them a call. Quickest way to get to the bottom of things.
I would email in one week, call in two. Sometimes they forget because they have a lot of work, and it's not necessarily purposely brushing you off.
I just dont want to piss him off
I get it, and I have the same personality type. But after a certain point, you have to make sure if his inaction is due to work or due to his opinion of you. Chances are, if you piss him off now with a reasonable reminder, he won't be someone you want to work with.
