IB vs S&T in 2020

Been set on IB for a little while now, but have had great convos with people in S&T and it sounds more interesting (esp for a math/econ major) and obviously the hours are better. Is S&T still a good career path for the future? Are there any exit-ops besides hedge-funds? Do people ever jump from S&T to Fed related jobs much later on?
