Why did you guys choose to go into IB when there are higher paying jobs for quants, HF, PE, VC, prop traders, stockbrokers?

According to both my undergrad and master's finance classes, it is.
A lot of the positions you mentioned don't abundantly recruit from undergrad. IB is viewed as a good platform to quickly build the skills, work ethic and knowledge at the start of your career. You can then use these to progress up the ladder in IB or more commonly (in the US), transition into one of the paths you listed.
Is IB the only profession where you can do this? No, it's not. But it's one that achieves those things and pays well.
(Note: Whilst I've listed the benefits of IB, there is a tonne of boring, mind-numbing work going on made worse by constant reiterations and office politics)
