Why not be more proactive. If you're seriously interested in cultivating a relationship with this person, I'd certainly follow up with a specific date in mind. Something like: "I wanted to thank you again for taking the time to speak to me over the phone, and then following up the call with a brief meeting over coffee. I would very much appreciate the opportunity to speak with you, at your convenience, and will avail myself to any venue you prefer."

Something like that, so that you don't just put a thought into their head, but that you put the onus on them to either turn down the chance to meet with you, or they may choose the date and place for your next meet. Worth a shot anyway.
