I mean realistically what are your options right now? It's not like you can lateral at this point, or just a few months into working. You're going to need to make it at least 8 months (ideally a year) before anyone will take you seriously as a lateral.

Presumably they have hired FT replacements for those interns and you just haven't heard about it? 

I would not reach out to them about staffing, no matter how you word it it's just going to come off as anxious or that you aren't wanting to work long hours, and these types of things are readily shared around the office. And again, you really don't have any alternatives here. Be ready to learn and realistic that you're probably going to work a ton... being bitter about staffing levels before you even start is really not a good place to be.
