Will be leaving my current firm soon (offer expected to come next week as I have final rounds at a few places).
My pay schedule lines up with next Friday (12/17). If I were to give my 2 weeks (obviously I'll be kicked out same day) on the following Monday (12/20), how much of that next 2 week pay period would I receive?

Nothing to do with pay period. If you give 2 weeks and offer to work it but they tell you to leave, you'll receive full pay through Jan 3rd (2 weeks) as well as payout of any accrued vacation days you have.
Make sure they are telling you to leave and you're willing to work the 2 weeks though - i.e. be clear in your HR email that your official last day is Jan 3.

Quick follow-up. Is the company able to force me to use those PTO days during the 2-week stint to avoid paying for PTO days on top of the normal 2-week paycheck?
I don't think there's a specific law against it, just "best practice" that they don't do that, but I've never heard of that happening. Maybe if you're at a tiny firm, but I doubt they'd even remember whether/how much PTO you have left
