Does anybody know how to remove salt stains from their shoes? Just when I think they're gone, my shoes dry and there they are still!

Haha, my shoes had a small stain from that and just removed it.
It's hard for a stain to ruin shoes; take them to a good shoe repairman. We live in such a wasteful society, most nice leather shoes that are tossed can actually be repaired for a fraction of the cost.
Wet a paper towel, and first dry your shoes. Depending on the quality of the leather, they may be ruined. But, I would still keep trying. Now, after your shoes are dry use shoe polisher (the Kiwi stuff) with a used toothbrush. Then use the polishing brush.

Buy winter boots. Use leather shoes inside. Leave them at your office on your way out.
Buy some black (brown) shoe polish, apply, rub it in with a soft cotton cloth, polish with same cloth (use a dry side), the stain will be gone. Do it at your own risk: depending how nice are the shoes or how badly you want the stain gone.
Disclaimer: Worked for me many time. Did that on boots, high quality thick leather.
Also, buy some water repellent spray. Should keep the salt off.
