Question about AI being used in ER/IB

Finished up my first year studying finance/math at a non target. Got an offer at a small hedge fund on their equity research team (youngest intern they've ever hired, still don't feel like I deserve it.) 

My question is about AI. The shop I'm at is looking for AI outside of GPT/Claude/Grok, because we want to be able to run models locally, preferable using the information that they have without possibly exposing any MNPI or internal info about processes get sent to an LLM dev to avoid any risk related to data. 

My question is basically is there an AI that exists that would run locally and accept the upload of large (think 500+ page documents)? I know we could run models locally on ollama, but from my understanding there isn't a model that is able to accept documents.
