I was able to land an off-cycle IB internship at a BB (my first ever IB internship), but it will delay my graduation by a year. Should I take the internship and not look back or should I just finish off the last year of my undergraduate degree?

I suggest taking the internship and delay. I delayed by a semester to start MSF and kinda consider the whole MSF the best kind of graduation delay, and it had a massive payoff.
Definitely delay graduation if you can, it will pay dividends post-graduation with the experience under your belt.
Weigh the pros and cons. If there are more pros when you take your internship plus you'll get better opportunities - I think it's better to delay your graduation.
