You should speak to your staffer and express your concerns. Do it sincerely and have the facts to back yourself up (e.g. of the past X staffing, Y were doing strip profiles, etc.). You didn't mention what the other juniors on your desk were staffed with, but assuming they had more interesting staffings and live deals, you could refer to those too. Express what you want to learn and where your interests lie. If you have a good staffer, they should try (as someone who has worn that hat, it's not always in our control though).
If things persist, this is something you can and should speak with your team head about. Especially if you're a strong performer, and even if you're not, they can and should intervene. Good luck.
