During an informational interview, for example, are I-Bankers allowed to answer the question "what was your favorite deal that you worked on?"
I know that they are not definitely not allowed to talk about anything on-going. But are they allowed to talk about the past deals they have worked on?

They are only allowed to discuss publicly available knowledge. Even then, bank policy may forbid one from discussing past deals.
