I got a referral to speak with a VP at SunTrust about a SA internship. When I reached out to him he responded Saturday morning that we should talk either today or tomorrow. I emailed him back saying Monday was perfect and asked if there was a best time for him to speak. He hasn't responded yet. Should I email him back today?

I thought the same thing until he responded about setting up a time to talk. Maybe a SA that had accepted ended up taking another offer?
I would wait till close of business today (or a little bit after), then email him saying you're free anytime this evening or tomorrow if he still has some time to chat, and to just let you know what is most convenient for him.
