If I were a senior graduating next may and would want to consider myself to be eligible for an internship next summer, can I tell the companies that I am considering to delay my graduation date into next fall semester, and after getting into their SA classes, and changed my mind and decided not to continue doing an extra sem?

While I've heard of plenty of stories of people staying an extra semester to get an SA, I haven't heard of anyone claiming they were staying, get the SA, and then back out of the extra semester. That would more likely than not be automatic ding from FT.

 

I think this would be fine if you get a FT offer and talked to them about it, but there would obviously be no guarantee that they would let you start "early". I don't think would ding you for trying to graduate early

 

People do it all the time. Get the SA, do the internship, get the offer and graduate "early". Either they start you in Jan or you wait until the next summer. Good opportunities to enjoy life because you won't have a lot of free time when FT starts.
