Best way to convey interests during interview?

I may just be a boring person, but I sometimes find it challenging when talking through certain hobbies/interests during interviews or perhaps some of my hobbies are less commonly shared / less relatable. I am curious as to how you guys best talk through some of your interests during an interview.
How in depth do you elaborate on that in your answers? Do you tell a story about your most recent hiking trips if you enjoy hiking? Or do you go even further to describe how you took up hiking? Are your interests supposed to be reflective of your personality in any way?
Would appreciate any advice.
