Hi. Im an EU passport holder but don't study in the UK, I am trying to get an internship in London. What is my 'right to work' in the UK and what are (if any) the barriers that come with this in terms of recruitment/landing an offer?

Unless grand-fathered into the existing EUSS, you don't have any right to live or work in the UK. Therefore a T5 visa should be required to carry out an internship, temporary worker-gov authorized exchange visa.
A company may want to sponsor you afterwards for you to live and work in the UK.
