When meeting for coffee chats with senior VPs and a few times now I have had them ask at the end of the meeting “what can I do for you” or “what do you need from me”. What are good responses to that, or what would you say?

Depends on what you are meeting with them for / what is going on in your world. If you are networking and are familiar with them you can ask if they know anyone in a part of the business you are interested in or ask if they could be a reference or review your resume etc.
