If you don't have a guarantor, landlords will ask for a letter of employment to verify that you have a job. They specifically say an offer letter is not acceptable.
I'm a little confused-- I'm not starting FT until the summer but obviously need a place to live a few weeks before I start. Will my bank give me a letter of employment right now before I actually start?

No they won't provide it. All banking analysts are homeless until they start the very first day of work, and only then can they get an apartment.
There is absolutely no solution to this problem, there is nothing you can do about it, you should not use any common sense whatsoever.
