Seeking advice on how to break into IB

Hi, so I wanted to make this post mainly to present in short my current situation, my objectives for the near future and see if anybody had any advice on what can I/should I do know if I hope to have any chance on achieving my goals, thanks in advance to anyone who gives out some advice! (and sorry for the long post)

So I'm currently 20, doing the last few months of my second year at uni, I come from South America and I'm currently studying business in mainland western Europe at a very good (triple accredited) uni (though I wouldn't believe its a target school), from July through December, which is my summer break and first block of my third (and last) year at uni I was supposed to be doing either an internship or exchange. I initially gained an interest in finance during the finance course we had and so I decided I wanted to do an internship in the field and didn't even apply to exchange.

Thing is, I've started to learn how competitive and hard it is to get into finance, even trying to leverage every contact I had at major banks they were all pretty useless, I applied to multiple summer internship and off cycle roles all over Europe (can't do US cause I have no visa) but major problem is I only speak Spanish and English fluently (which basically narrows down my choices a lot (I'm basically limited to Spain and the UK)), also my GPA is decent, but crap for finance (I have 7.8/10 (8.25 is cum laude)) so I'm trying to get that up and I will but its too late for this round of applications, also I barely have any experience at all, only a small internship in accounting at a big mining firm and I'm the chairman of an investment group in my uni (which I put as work experience since I have nothing else to put).

I know I need more experience to have a chance but of the 20 or so banks and smaller finance-related firms I've applied too, I either never hear back or get rejected immediately so I can't get the bloody experience (and tbh I wouldn't pick myself either since I'm sure the other applicants have way more going for them), I'm willing to work for free, bust my ass and quite literally go anywhere in the world but still, can't find a thing, only thing that seems to be relatively possible (cause of connections) is going back to my home country and doing an internship in the private banking/asset management division of the largest bank in my country (a local bank with limited international presence), should I (try and) take this opportunity? I would much much rather not go back to my home country and have my internship somewhere else but it seems impossible to do; should I maybe just do a minor? and what else can I do to get closer to breaking into IB, like how can I make myself stand out more?

any help/advice is very welcomed, thank you for reading and hope you're having a good day!
