S&T, IB, or something different?

I'm a freshman at a HYPSM school and I'm debating what types of internships I want to pursue for summer 2023. I was thinking about doing IB but I've been interested in S&T and quant stuff recently and I think it would fit what I like a lot more than IB. Only thing I worry about is, if I do S&T or Quant right out of college, will my exit opportunities be worse? Also how do PE internships work bc I was curious about that as well. Thanks!
