Summer offer situation

Hi everyone. I got an offer for a summer position at a firm, which I'm really happy about. But I still have a couple interviews this week and am particularly interested in one of the companies. How do I go about delaying the offer? I wasn't given a day to accept by, just that I'd be receiving further info regarding paperwork soon and asked when I'm available. Also, if I do later reject the offer, how do I do so in a graceful fashion?
