In my opinion, the best way to add some value to your exchange semester is not to pick the most known university on your list but to seize this opportunity to learn or to perfect a language. In your case, I would advise you to go to Montreal. Really nice city, fun as exchange student, really great school and exchange student association. But you have to play the game as well and do your best to speak french (you can take classes in french as well I guess). This is only my two cents but I rather put business proficient in French on my resume than a school name during a exchange semester. Try to go for the autumn semester, winter is kinda harsh there.
