Little Red Door does creative cocktails if that's your thing. Marais is great and avoid Trocadero/Eiffel Tower/Arc de Triomphe areas like guy below said. I also used to love Rue Princesse in the 6th, not sure if it's still good today.
For any big city, imo it can never hurt to walk around and stumble upon something rather than planning things that can only let you down. Enjoy!
