Within the last 5 years, I went down the journey of trying some of the best single malts (within my budget.) Thought I'd share some of my favorite breast milks and find out where your palate is at. I think it is only fair to share that I received a bottle of Lagavulin 16 for Christmas in 2015 and it changed me life.
Blew me mind: Laphroaig Triple Wood, Highland Park Valkryie, Lagavulin Distiller's Edition.
Everyday Drams: Laphroaig 10, Ardbeg 10, Ardbeg 5 Wee Beastie (young but wild), Highland Park 12, Sheildaig Speyside 12 (Total Wine Brand), Glenmorangie 10, Lagavulin 8 (young but still has character.)
Great Drams: Balvenie Doublewood & Single Barrel (Caribbean Cask is not bad), Dalwhinnie 15, Coal Ila, Laphroaig Quarter Cask, Ardbeg An Oa & Uigeadail, Glendronach 12.
Overrated Drams: Bowmore 18, Macallan 12 (never did it for me), Bunnahabhain 12, Johnnie Walker Blue Label (blended), Laphroaig Lore.
There are others but I found that price doesn't equate to quality. Nonetheless, it's great to have options.

You got me there. I had a very short run with bourbons before the scotch came along. Angel’s Envy is nice and Woodford Reserve is smooth. Had a bottle of Basil Hayden’s once and it made a good impression.

Angel's Envy and Basil Hayden's are both great value picks. Neither one is top shelf bourbon but they taste close enough and for only something like $40 a bottle. I would put Eagle Rare in the same bucket, and you could make an argument for Bulleit in a pinch. If you absolutely have to save a buck, then first I'd say get a real job you peasant, and second I'd recommend Stillhouse or maybe even Jack Daniel's (which could technically qualify as a bourbon, but they decided not to use the term). Woodford Reserve is... well, it's what they serve you when you ask for whiskey when flying domestic. And that should tell you all you need to know.
If you want some good stuff, Barrell is great if sometimes hard to find, Blanton's has good stuff at a variety of price levels, and Pappy Van Winkle is expensive for a reason.
Overall I would say that the bourbon market is definitely a lot more "compressed" compared to the scotch market. You can find tons of great bourbons for not much cash, like the aforementioned Basil Hayden's and Angel's Envy. And honestly I'll even drink Woodford if there are no other options; I won't be happy about it, but I'll do it, because I'm an alcoholic. But I am not touching Jim Beam. Ever.
The Costco stuff is pretty good. I thought it was more "flavorful" and it tasted kind of smoky. Coming from single malts in was quite a different experience.
On the bourbon side - I've bought 12 yr Whistlepig from there for like $90 which was a solid find
What's the "best value" aka combination of cheap and decent quality, I have an unrefined palate but want to order and drink this without looking like a knob. I don't like wines so my go-to at the moment is beer.
Glenmorangie 10 is the way to go. After you’ve gotten accustomed to it naturally you can go to Glenmorangie Lasanta 12 year. Highland Park 12 will be a real treat for you as well.
If you’re ever feeling adventurous and would really like to test your palate, try Ardbeg 10. Add a drop or two of water, if necessary. That’ll ease the smokiness but open you up to the other notes it has to offer.
^ As he said, try both a non-peated (like Glenmorangie) and a peated (like Ardbeg) scotch. Some people have very strong preferences for one or the other.

I am a big fan of Lagavulin 16. I also like Glenmorangie Nectar D'Or for something a bit different. For bourbon, I'm a big fan of Michter's small batch.
