Looking for Meal Prep Advice

Hey everyone. Just started a FT position in Manhattan. As you may know, food and grocery prices burn a hole in your pocket here and it’s tough staying healthy and cooking after a long ass day of work.

I work from 7AM to ~7/8PM in office. I always skip breakfast and have been loosely doing intermittent fasting. Does anyone have any convenient, tasty meal prep ideas for bringing lunch to the office and dinner at home? Or even just tips in general on staying healthy while working? I know there’s 1000s of ideas online but thought to try on here first. Thanks!

I also do "loose" intermittent fasting (i.e. enforced during weekdays except if I'm starving, and won't turn down a brunch invite on a weekend) and have found that bringing simple, easy meals for lunch 3 days a week and going out for lunch 2 days a week is a good balance - same goes for dinner orders.

I do 1 simple recipe in a bigger portion that I don't mind eating 3 times over a week - this week is salmon, coconut rice, and mango salsa (from the workweeklunch website - great resource btw). If people want to grab lunch or I'm not feeling the meal I made, I use one of my 2x a week free passes to buy lunch and the meal stays in the fridge for the next day. And then dinners you have plenty of healthy options on Seamless, I always get sweetgreen, Dig, etc with again 1 or 2 "cheat dinners" per week - nothing gluttonous usually, but just freedom to order pizza or Thai food if I want it.

I think trying to meal prep lunch/dinner every week, or even 5 lunches a week, is a great way to burn out from cooking. IB is a time suck and I cook fancy meals on Fridays/Saturdays but keep my meal prep simple and give myself enough freedom that I don't get super sick of it.
