Ribs are Paradise

'Wet ribs', that's the first time I've heard that term. Dry rub feels like it's cheating, I wanna feel like I just went down on Period Pam.

Either way, Kansas City tops the rest. They truly are paradise in KC.

I'm a fan of wet ribs. I like the sauce thickened on the meat - not too wet.

Dry rub > marinate over night > 4-6 hours in oven > bbq and sauce > fall off the bone delicious

Beef ribs

Surely not as good as KC, Texas, Memphis and the like - but Twin Anchors in Chicago is a fantastic rib spot (IYKYK). Prohibition sauce FTW. 

Also the scene where Harvey Dent kills Detective Weurtz in The Dark Knight was filmed there. So makes it better.

In New York, there really is a shortage of good bbq per capita. You got Mighty Quinn’s as a quintessential NY bbq chain, but honestly it’s shit compared to bbq down south. That one place in red hook is good, but every time I’ve been it’s been a 1hr+ wait

I recently had a business trip in texas and drove to Goldie’s bbq. The number 1 place on the texas monthly. The guy there said for decent ribs in an apartment setting, pat dry baby back ribs, but down a mustard base, pat in your favorite rub (salt, pepper, onion powder, garlic powder, paprika, turmeric and cumin), let sit for 1 hour, wrap in foil, bake until fork tender, open foil and sauce both sides, sauce again for 15 mins and broil.
