what to do between graduation and late start date?

Just found out I'll be starting in late fall as a consultant. I'll be traveling for a bit over the summer but don't know how else I'll fill my time. Thinking of finding an internship/job in an industry for something that I normally wouldn't have a chance to experience (e.g., I'm really interested in the restaurant industry and think it could be cool to work in restaurant ops) 

Would appreciate any other thoughts/ideas!

What is “restaurant ops”? Like a corporate role at a chain restaurant?

I highly recommend you not use your free time between college and a full time job working some random job. You will look back on that decision in a year and punch yourself straight in the nuts with regularity for giving up such a great opportunity to do literally anything other than work. 

Go eat at awesome restaurants. Don't work in them. You said you're traveling already - that's a good start. Now go work out and get in the best shape of your life, get drunk randomly during the week, meet people and hook up with them, get into a new hobby, read some books, catch up on any shows you've missed, and then travel more.

There is absolutely zero benefit to working during this free sabbatical unless you desperately need the money. Remember - it could easily be your last free summer until you're in your 60s. What I would give for 4-6 months of pure bliss.
