What you would do with a gap year during COVID?

In a position where I have graduated college and am taking a year off before I start my banking job. If you had a spare year between college and work what would you do with it?

Travel, you won't have much time for it for the first ca. 3-5 years once you start working FT

I studied in Europe and traveled to >10 countries and >30 different cities during my college time. This was the most value-adding part of the college and contributed to the change in my world views and personal development.

Traveling is the best thing you can do right now.
