Chipotle recently announced they will start to sell Queso across several restaurants in the US, beginning in Colorado and California. This is the restaurant's comeback plan to regain customer trust and increase sales after a number of food safety issues - including E. Coli and norovirus outbreaks in 2015.
Chipotle CFO stated they are working hard to "change the narrative and encourage our guests" in order for them to keep coming back. Queso is the main part of this change.
