Interviewers during modeling tests - do you actually watch the candidate build their model?

Question in title. I recently did a 3+ hour long modeling test on Zoom and my interviewer had me share my screen, video and audio while I took my test. He turned his own camera and audio off so I figured he wasn’t actually paying attention, but we chatted at the end of the test before I sent him my file and he already knew what my answers were and everything, so he must have been watching at some point.

Curious if anyone could weigh in on how you usually proctor these tests and if you actually watch the model being built and assess the candidate’s process in real time. I think my model was good but I worked slowly and not sure if that would count against me.
